This is so delicious and satisfying. It tastes exactly like the real thing. I think if I were eating this at someone's house, I might have to ask if there were meat in it. Serve with one pound of pasta of your choice. I use DeCecco or Wegmans brand.
Vegan Fazool's Ragu Alla Bolognese
3-4 tablespoons olive oil
1 medium onion, finely chopped
2 carrots, peeled & chopped
1 celery stick, chopped
5 cloves of garlic, minced
1 package Smart Ground vegan ground beef
3 ripe, Roma tomatoes, chopped (no need to peel or seed)
1 tablespoon dried oregano (Penzey's if you've got it)
1/4 cup white wine
1 28 oz can organic chopped tomatoes or Trader Joe's Marinara Sauce (it is the same size can)
1 tablespoon of Better than Boullion's No-Beef Base (certified Vegan!)
freshly ground black pepper to taste
sea salt to taste (if needed at the end)
Serve with a sprinkle of nutritional yeast!
In a large pan (non-stick or stainless, doesn't matter) heat the olive oil over medium heat until it is fragrant. Saute onion, carrots and celery for about 5 minutes. Add the garlic and saute for about another minute, being very careful not to burn it. Add the "Smart Ground" vegan ground "beef" and the Roma tomatoes (if you don't have these, just leave them out. We had them on our counter, so I threw them in). Add the oregano. Saute for about 3-4 more minutes. Then add 1/4 cup of white wine and a 28 ounce can of chopped tomatoes or Trader Joe's Marinara Sauce (if you can get it). Add 1 tablespoon of the No-Beef base and the freshly ground pepper (and salt, if needed) to taste. Simmer for about 20 minutes. In the meantime, boil up your pound of pasta.
Make sure you salt the pasta water (I use about 1 teaspoon of Kosher salt) once it has come to a boil. Cook pasta for a minute or two less than the package directions, then drain and add immediately to the hot Bolognese sauce and saute for a minute or two. Serve!
